  • 2 cups chicken stock
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground allspice
  • 1 tablespoon honey
  • 2 tablespoons lemon juice
  • 0.5 cup kalamata olives, sliced
  • 1 cup couscous
  • 1.25 cups water
  • 0.5 teaspoon ground cinnamon (for couscous)
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Season the chicken thighs with salt and pepper, and sear them in the pot until golden on both sides, about 4-5 minutes per side. Remove and set aside.
