  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece bay leaf
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0.5 cup grated Parmesan or Kefalotyri cheese (optional)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Season the chicken thighs with half of the salt and pepper, then sear them in the hot oil for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.

Reduce the heat to medium and add the remaining tablespoon of olive oil to the skillet. Sauté the chopped onion for 3-4 minutes until softened and slightly translucent.
