Ingredients

  • 500 g large shrimp, peeled and deveined (tails on or off)
  • 4 tbsp olive oil
  • 1 medium onion, finely chopped

  • 120 ml dry white wine
  • 400 g canned crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sugar
  • 1 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 2 tbsp fresh parsley, chopped
  • 100 g feta cheese, crumbled (optional)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in batches and cook on each side for 1-2 minutes until they turn pink. Remove from the skillet and set aside.

Step 2

Add the remaining 2 tablespoons of olive oil to the skillet. Sauté the chopped onion for 3-4 minutes until softened.

Add the minced garlic to the skillet and sauté for another 1 minute until fragrant.
