  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 2 pieces chicken breasts

  • 1 teaspoon garlic powder
  • 1.5 teaspoons dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium (diced) cucumber
  • 1.5 cups (halved) cherry tomatoes
  • 0.5 medium (thinly sliced) red onion
  • 0.75 cup (sliced) kalamata olives
  • 0.75 cup (crumbled) feta cheese
  • 3 tablespoons lemon juice
  • 3 tablespoons (chopped) parsley
  • 2 tablespoons (chopped) dill

Directions

Step 1

Place the bulgur wheat in a heatproof bowl. Pour the boiling water over it, cover the bowl with a plate, and let the bulgur sit for 15-20 minutes until tender and fluffy. Once done, fluff with a fork and let it cool.

Step 2

While the bulgur is soaking, prepare the chicken. Rub the chicken breasts with 1 tablespoon olive oil, 1 teaspoon garlic powder, 1 teaspoon oregano, 0.5 teaspoon salt, and 0.25 teaspoon black pepper.

Step 3

Heat a grill pan or skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked through and internal temperature reaches 165°F (74°C). Remove from heat, let rest for 5 minutes, then slice into bite-sized pieces.
