  • 2 medium Tomato
  • 1 medium Green bell pepper
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Oregano (dried)
  • 0.5 teaspoon Red chili flakes
  • 0.25 teaspoon Ground black pepper
  • 5 whole Kalamata olives (optional)
  • 1 loaf Crusty bread (for serving)

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Slice the tomatoes into thin rounds and the green bell pepper into rings, discarding the seeds.

Step 3

In a small oven-safe dish or clay pot, create a base layer with half of the tomato slices.

Step 4

Place the block of feta cheese on top of the tomato layer.

Step 5

Top the feta cheese with the remaining tomato slices and the green bell pepper rings.

Step 6

Drizzle the extra virgin olive oil over the layers evenly.
