  • 3 tablespoons Olive oil

  • 4 cloves Garlic cloves, minced

  • 1 teaspoon Dried thyme
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 1 medium Red onion, sliced
  • 0.5 cup Kalamata olives
  • 1 cup Cherry tomatoes
  • 0.5 cup Feta cheese, crumbled

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.

Place the chicken thighs in a large bowl or zip-top plastic bag. Pour the marinade over the chicken, making sure each piece is coated. Let the chicken marinate for at least 15 minutes, or ideally up to 2 hours in the refrigerator for deeper flavor.
