Ingredients

  • 4 slices sourdough bread
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup packed fresh spinach
  • 0.25 cup chopped sun-dried tomatoes
  • 2 tablespoons unsalted butter
  • 1 teaspoon extra virgin olive oil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon black pepper
  • 1 small grated garlic clove

Directions

Step 1

In a small bowl, combine the crumbled feta cheese, shredded mozzarella cheese, dried oregano, grated garlic, and black pepper. Mix until well blended.

Step 2

Butter one side of each slice of sourdough bread using 1 tablespoon of butter per sandwich. Set aside.

Step 3

Heat a teaspoon of olive oil in a non-stick skillet over medium heat. Add the fresh spinach and sauté for 1-2 minutes until just wilted. Remove spinach from the skillet and pat dry with a paper towel to remove excess moisture.

Step 4

To assemble the sandwiches, place one slice of bread butter-side down on a cutting board. Layer half of the cheese mixture, half the wilted spinach, and half the chopped sun-dried tomatoes. Top with another slice of bread, butter-side up. Repeat for the second sandwich.

Step 5

Heat a large skillet or griddle over medium heat. Place the assembled sandwiches onto the skillet and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown, crispy, and the cheese is melted.

Step 6

Remove the sandwiches from the skillet and allow them to rest for 1 minute before slicing them in half. Serve warm and enjoy the Grecian flavors!
