  • 1 cup Kosher salt

  • 2 sprigs Fresh rosemary sprigs
  • 4 sprigs Fresh thyme sprigs
  • 6 sprigs Fresh parsley sprigs
  • 0.5 cup Juice of an orange
  • 0.25 cup Juice of a lemon
  • 8 cups Crushed ice

Directions

Step 1

In a large stockpot, bring 8 cups of water to a boil over high heat.

Step 2

Once the water is boiling, stir in kosher salt and brown sugar until both are fully dissolved.

Step 3

Add smashed garlic, black peppercorns, bay leaves, rosemary, thyme, and parsley to the pot.

Step 4

Reduce the heat to medium-low and let the mixture simmer for 10 minutes to release the flavors of the aromatics.

Turn off the heat and stir in the orange and lemon juice.

Allow the brine mixture to cool completely to room temperature. If time is limited, transfer the mixture to a heat-proof container and refrigerate until cool.
