  • 2 cups Great Northern beans (dried)
  • 2 tablespoons Olive oil

  • 2 medium Celery ribs, diced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 6 cups Vegetable broth
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Rinse the Great Northern beans thoroughly under cold water. Place them in a large bowl, cover with water, and soak overnight (about 8 hours). Drain and set aside.

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
