Ingredients

  • 2 medium zucchini
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs
  • 0.5 cup Parmesan cheese
  • 0.5 teaspoon garlic powder
  • 2 tablespoons fresh parsley
  • 2 tablespoons olive oil

Directions

Step 1

Wash the zucchini thoroughly and grate them using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.

Step 2

In a large mixing bowl, combine the grated zucchini, all-purpose flour, baking powder, salt, black pepper, Parmesan cheese, garlic powder, and freshly chopped parsley. Mix until well combined.

Step 3

In a small bowl, whisk the eggs until well blended. Add the eggs to the zucchini mixture and stir until fully incorporated.

Step 4

Heat olive oil in a large non-stick skillet over medium heat.

Step 5

Scoop approximately 2 tablespoons of the zucchini mixture and shape it into a small patty using your hands. Repeat this process with the rest of the mixture.

Step 6

Carefully place the zucchini patties into the hot skillet, making sure not to overcrowd them. Cook each patty for 3–4 minutes on one side until golden brown, then flip and cook for an additional 3–4 minutes on the other side.

Step 7

Once cooked, transfer the zucchini appetizers to a plate lined with paper towels to absorb any excess oil.

Step 8

Serve warm with your choice of dipping sauce, or enjoy them on their own!
