Ingredients

  • 4 large ripe tomatoes
  • 6 ounces cream cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons finely chopped parsley
  • 1 stalk finely diced celery
  • 2 tablespoons finely chopped green onion
  • 1 teaspoon lemon juice
  • 0.5 teaspoon sugar
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups shredded lettuce

Directions

Step 1

Wash the tomatoes thoroughly and pat them dry with a paper towel.

Step 2

Slice off the top of each tomato (about 1/2 inch) and set the tops aside. Use a spoon to carefully scoop out the insides, being careful not to puncture the walls of the tomato. Discard or save the pulp for another use.

Step 3

Sprinkle a tiny pinch of salt inside each hollowed-out tomato and place them upside down on a plate lined with paper towels to drain while preparing the filling.

Step 4

In a medium mixing bowl, combine the cream cheese and mayonnaise. Mix until smooth and creamy.

Step 5

Add the chopped parsley, diced celery, chopped green onion, lemon juice, sugar, salt, and black pepper to the cream cheese mixture. Stir to combine well.

Step 6

Use a small spoon to carefully fill each tomato with the cream cheese mixture, packing it gently but not overstuffing.

Step 7

To serve, create a bed of shredded lettuce on a serving platter or individual plates. Place the stuffed tomatoes upright on the lettuce.

Step 8

Optionally, place the reserved tomato tops back on each tomato for decoration or leave them off for presentation.

Step 9

Serve immediately, or refrigerate for up to 2 hours before serving to allow the flavors to meld.
