Ingredients

  • 2 pieces Large eggs
  • 2 teaspoons Chipotle Tabasco sauce
  • 0.5 pieces Avocado
  • 1 tablespoon Butter
  • 1 piece Cheddar cheese slice
  • 2 slices Bread (brioche or sourdough recommended)
  • 0.25 cup Spinach leaves
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

In a small bowl, crack the eggs and whisk gently with a fork. Add the Chipotle Tabasco sauce, salt, and black pepper. Whisk until well combined.

Step 2

Heat a non-stick skillet over medium heat and add the butter. Once the butter is melted and bubbling, pour in the egg mixture. Let it set for a few seconds, then gently scramble until the eggs are fluffy and cooked through. Remove from the pan and set aside.

Step 3

Wipe the skillet clean and drizzle in 1 teaspoon of olive oil. Toast the two slices of bread until golden brown on both sides. Remove the bread from the skillet and set aside.
