Ingredients

  • 1 head Cauliflower
  • 2 medium Tomatoes
  • 2 tablespoons Pine nuts
  • 1 pinch Saffron threads
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower into small florets and blanch them in boiling salted water for 5 minutes. Drain and set aside.

Step 3

Slice the tomatoes into thin rounds and set aside.

Step 4

In a small bowl, soak the saffron threads in 2 tablespoons of warm water to release their flavor and color. Let it sit for 5 minutes.

In a saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
