  • 500 grams fresh blueberries
  • 200 milliliters heavy cream
  • 1 whole vanilla bean

  • 80 grams granulated sugar
  • 2 tablespoons caster sugar (for caramelization)
  • 1 teaspoon unsalted butter

Directions

Step 1

Preheat your oven to 200°C (400°F). Grease four small ovenproof gratin dishes or a single large one with the teaspoon of unsalted butter.

Evenly divide the blueberries among the gratin dishes or layer them in the single dish. Set aside while you prepare the custard.

Step 3

Pour the heavy cream into a saucepan. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream.

Heat the cream gently over medium heat until it is just about to simmer. Remove the vanilla pod and set the cream aside to cool slightly.

In a bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and creamy.
