Preheat your oven to 160°C (320°F). Grease a large baking dish with butter and set aside.
Peel the potatoes and slice them very thinly (around 2-3 mm thick) using a mandoline or a sharp knife.
In a medium-sized saucepan, combine the heavy cream, milk, minced garlic, salt, black pepper, nutmeg, and smoked paprika. Heat the mixture over low-medium heat until it’s warm (do not boil), then remove it from heat.
Layer one-third of the sliced potatoes into the prepared baking dish, overlapping slightly. Pour one-third of the cream mixture over the potatoes, then sprinkle a handful of grated cheddar cheese.
Repeat the layering process two more times, ending with the cream mixture on top. Reserve a small handful of cheese for later.
