Gradually add 3 tablespoons of cold water, mixing just until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
While the dough chills, prepare the filling. Peel and core 5 medium-sized apples and grate them using a box grater.
In a bowl, combine the grated apples with 100 grams of brown sugar, 1 teaspoon of ground cinnamon, 0.25 teaspoon of ground nutmeg, and 2 tablespoons of cornstarch. Mix thoroughly and set aside.
Roll out the chilled dough on a lightly floured surface to fit your pie dish. Transfer the dough to the prepared pie dish, trimming any excess. Poke the base of the crust lightly with a fork to prevent bubbling.
Spread the grated apple mixture evenly over the prepared crust.
To make the streusel topping, mix 50 grams of rolled oats, 50 grams of all-purpose flour, 50 grams of brown sugar, and 50 grams of cold butter in a bowl. Use your fingers or a pastry cutter to mix until crumbly.
Sprinkle the streusel topping evenly over the apple filling.
Bake the pie in the preheated oven for 50 minutes, or until the topping is golden brown and the apple filling is bubbling.
Remove the pie from the oven and let it cool for at least 30 minutes before serving. Enjoy warm or at room temperature!
