Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 3 pieces Large eggs
  • 0.75 cups Whole milk
  • 0.5 cups Freshly squeezed grapefruit juice
  • 1 tablespoon Grapefruit zest
  • 1 teaspoon Vanilla extract
  • 1.5 cups Powdered sugar
  • 3 tablespoons Fresh grapefruit juice (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition.

Step 5

Mix in the grapefruit juice, grapefruit zest, and vanilla extract until combined. The mixture may look slightly curdled – this is normal.

Step 6

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk (start and end with the dry ingredients). Mix until just combined. Do not overmix.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Step 10

While the cake is cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and grapefruit juice until smooth. Adjust the consistency with additional sugar or juice as needed.

Step 11

Once the cake has completely cooled, drizzle the glaze over the top, allowing it to drip down the sides.

Step 12

Let the glaze set before serving. Slice and enjoy your delicious, citrusy Grapefruit Cake!
