Ingredients

  • 6 cups baby spinach
  • 2 medium grapefruit
  • 0.25 medium red onion
  • 1 large avocado
  • 0.5 cups walnuts
  • 3 tablespoons olive oil
  • 1.5 tablespoons white wine vinegar
  • 1.5 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash and dry the baby spinach thoroughly, then place it into a large salad bowl.

Step 2

Peel the grapefruits by removing the outer rind and pith. Using a sharp knife, slice between the membranes to extract the segments. Set the segments aside and squeeze any remaining juice from the membranes into a small bowl.

Step 3

Thinly slice the red onion and add it to the salad bowl with the spinach.

Step 4

Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado and add it to the salad.

Step 5

Toast the walnuts lightly in a dry skillet over medium heat for 3–5 minutes, stirring frequently to prevent burning. Remove from heat and allow to cool slightly before adding them to the salad.
