Ingredients

  • 500 ml Ruby red grapefruit juice
  • 120 ml Campari
  • 100 g Granulated sugar
  • 100 ml Water
  • 1 teaspoon Grapefruit zest
  • 4 leaves Fresh mint leaves

Directions

Step 1

Prepare a small saucepan and combine 100 ml of water with 100 g of granulated sugar.

Step 2

Place the saucepan over medium heat and stir until the sugar dissolves completely, forming a simple syrup. Remove from heat and allow it to cool completely.

Step 3

In a medium mixing bowl, combine 500 ml of freshly squeezed ruby red grapefruit juice, 120 ml of Campari, 1 teaspoon of grapefruit zest, and the cooled simple syrup. Mix until well combined.

Step 4

Pour the mixture into a shallow, freezer-safe dish (a standard glass or metal baking dish works well).

Step 5

Place the dish in the freezer and let it freeze for 30 minutes.

Step 6

After 30 minutes, use a fork to scrape the partially frozen mixture, breaking up any ice crystals.

Step 7

Return the dish to the freezer and repeat the process of scraping with a fork every 30 minutes for about 3-4 hours, or until the granita has a fluffy, crystalline texture.

Step 8

Spoon the granita into serving glasses or bowls, garnish each serving with a mint leaf, and serve immediately.
