Ingredients

  • 2 cups grape tomatoes
  • 4 slices bacon
  • 1 medium (chopped) yellow onion
  • 2 cloves (minced) garlic
  • 6 pieces (finely chopped) fresh sage leaves
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on a plate lined with paper towels to drain. Reserve 1 tablespoon of bacon drippings in the skillet.

Step 2

Chop the cooked bacon into small pieces and set aside.

Step 3

In the same skillet with the reserved bacon drippings, add the olive oil and heat over medium heat. Add the chopped onion and cook for 5 minutes or until softened and lightly golden.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the grape tomatoes to the skillet. Cook for 6-8 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Step 6

Sprinkle the chopped sage leaves over the tomatoes and stir well. Season with salt, black pepper, and red pepper flakes (if using). Continue cooking for 2 more minutes to allow the flavors to meld.

Step 7

Remove the skillet from the heat and stir in the chopped bacon.

Step 8

Serve warm as a side dish, or use as a topping for pasta, toast, or salad.
