Ingredients

  • 2 cups rolled oats
  • 0.5 cup chopped almonds
  • 0.5 cup chopped walnuts
  • 0.5 cup shredded coconut (optional)
  • 0.5 cup honey
  • 0.25 cup brown sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.25 cup mini chocolate chips (optional)
  • 0.25 cup dried cranberries or raisins

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a large bowl, combine rolled oats, chopped almonds, chopped walnuts, shredded coconut (if using), and dried cranberries or raisins. Mix well and set aside.

Step 3

In a small saucepan over medium heat, combine honey, brown sugar, unsalted butter, and salt. Stir continuously until the sugar has dissolved and the mixture is smooth. Remove from heat and stir in vanilla extract.

Step 4

Pour the honey mixture over the dry ingredients. Stir until everything is evenly coated.

Transfer the mixture to the prepared baking pan. Using a spatula or your hands (lightly greased to prevent sticking), press the mixture firmly and evenly into the pan.
