Ingredients

  • 4 cups Fresh blackberries
  • 0.5 cups Granulated sugar
  • 2 tablespoons Cornstarch
  • 1 tablespoons Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 cups All-purpose flour
  • 1 cups Rolled oats
  • 1 cups Granola (preferably with nuts and dried fruit)
  • 0.5 cups Brown sugar
  • 0.5 teaspoons Baking powder
  • 0.5 cups Unsalted butter (cold and cubed)
  • 0.25 cups Milk
  • 0.5 teaspoons Ground cinnamon (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, combine the blackberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently until the blackberries are evenly coated. Transfer the mixture to the prepared baking dish.

Step 3

In another large bowl, stir together the all-purpose flour, rolled oats, granola, brown sugar, baking powder, and cinnamon (if using).

Step 4

Add the cold, cubed butter to the dry mixture and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

Step 5

Stir in the milk until the mixture starts to come together. It should be moist but crumbly.

Step 6

Evenly sprinkle the granola-oatmeal topping over the blackberry mixture in the baking dish.

Step 7

Place the cobbler in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the blackberry filling is bubbling.

Step 8

Remove from the oven and let cool for 10 minutes before serving.

Step 9

Serve warm with a scoop of vanilla ice cream, whipped cream, or enjoy it as is.
