Ingredients

  • 500 grams fresh asparagus
  • 2 tablespoons butter
  • 1 medium, chopped yellow onion
  • 2 minced garlic cloves
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Rinse the asparagus and trim the tough ends. Cut the asparagus spears into 1-inch pieces, setting a few tips aside for garnish if desired.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Step 3

Add the minced garlic and cook for an additional 30 seconds, stirring to prevent burning.

Step 4

Add the asparagus pieces to the pot and pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce to a simmer. Cook for about 10-12 minutes until the asparagus is tender.

Step 5

Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and puree in batches, then return it to the pot.

Step 6

Stir in the heavy cream, salt, and black pepper. Heat on low for 2-3 minutes until warmed through. Adjust seasoning to taste.

Step 7

If desired, garnish with Parmesan cheese or the reserved asparagus tips before serving.

Step 8

Serve hot with a slice of crusty bread or a side salad for a complete meal.
