Ingredients

  • 1000 grams pumpkin (peeled, deseeded, and cubed)
  • 2 tablespoons olive oil
  • 150 grams smoked bacon (diced)
  • 1 large yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 liter chicken stock
  • 150 milliliters heavy cream
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoons ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper (freshly ground)
  • 30 grams pumpkin seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Toss the cubed pumpkin in 1 tablespoon of olive oil, spreading it evenly on a baking sheet. Roast in the oven for 25-30 minutes until soft and slightly caramelized.

Step 3

Heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced bacon and cook until crispy. Remove and set aside for later use.

In the same pot, add the chopped onion and cook for 5-7 minutes until softened and translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
