Ingredients

  • 2 pieces Large eggs
  • 2 pieces Slices of bread
  • 2 tablespoons Butter
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 slices Cheddar cheese
  • 2 slices Bacon (cooked)
  • 1 handful Arugula or spinach
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Heat a non-stick skillet over medium heat and add 1 teaspoon of olive oil.

Step 2

Crack both eggs into the skillet, seasoned with a pinch of salt and black pepper, and cook sunny-side up or to your preferred level of doneness. Set aside once cooked.

Step 3

Butter one side of each slice of bread. Spread the mayonnaise on the unbuttered side of one slice and Dijon mustard on the unbuttered side of the other slice.

Step 4

In the same skillet, toast the buttered sides of the bread until golden and crispy, about 2-3 minutes per side.

Step 5

Place a slice of cheddar cheese on the toasted side of each bread slice, allowing it to melt slightly.

Step 6

On the mayo-spread slice, layer the cooked bacon, fried eggs, arugula or spinach, and the second slice of bread (mustard-side down with the cheese).

Step 7

Press the sandwich slightly to hold it together and return it to the skillet for an additional 1-2 minutes per side to let everything meld together.

Step 8
