Ingredients

  • 250 grams Ground beef
  • 250 grams Ground pork
  • 50 grams Butter
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 60 ml Heavy cream
  • 125 ml Chicken stock
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Lemon juice
  • 1 teaspoon Optional: Dijon mustard

Directions

Step 1

Finely dice the onion and mince the garlic cloves.

Step 2

In a skillet, heat the butter over medium heat until melted. Add the onion and garlic and sauté until softened and golden, about 5 minutes.

Step 3

Add the ground beef and ground pork to the skillet. Break up the meat with a wooden spoon and cook until browned, about 7-10 minutes.

Step 4

Stir in the bay leaf, salt, black pepper, and nutmeg. Mix well to distribute the spices.

Step 5

Pour in the chicken stock and reduce the heat to low. Simmer for 10 minutes, allowing the mixture to thicken slightly and the flavors to meld.

Step 6

Remove the bay leaf and stir in the heavy cream. Cook for an additional 5 minutes on low heat.

Step 7

Take the skillet off the heat and let the mixture cool slightly, about 5-10 minutes.

Step 8

Transfer the cooled meat mixture into a food processor. Add the lemon juice, parsley, and Dijon mustard (if using). Process until smooth, scraping down the sides of the bowl as needed.

Step 9

Taste the paste and adjust seasoning if necessary with additional salt, pepper, or lemon juice.

Step 10

Spoon the meat paste into a serving dish or airtight containers. Chill in the refrigerator for at least 2 hours before serving to allow the flavors to develop.

Step 11

Serve as a spread on fresh bread, crackers, or vegetable sticks. Store leftovers in the refrigerator for up to 5 days.
