Ingredients

  • 6 units large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1 tablespoon sweet pickle relish
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika (for garnish)
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a medium saucepan and fill with enough water to cover them by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan with a lid, turn off the heat, and let the eggs sit in the hot water for 10 minutes.

Step 3

Carefully transfer the eggs to a bowl of ice water to cool for 5-10 minutes. This makes peeling easier.

Step 4

Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.

Step 5

Mash the yolks with a fork until they’re crumbly. Add the mayonnaise, Dijon mustard, white vinegar, sweet pickle relish, salt, and black pepper. Mix until smooth and creamy.

Step 6

Taste the filling and adjust seasoning if necessary. If it’s too thick, you can add a tiny bit more mayonnaise.

Step 7

Spoon or pipe the yolk mixture back into the egg whites. Use a piping bag or a resealable plastic bag with the corner snipped off for a neater presentation.

Step 8

Sprinkle the filled eggs with paprika for a classic garnish, and if desired, add a small sprig of fresh parsley on top for a pop of color.

Step 9

Refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!
