Ingredients

  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 110 grams unsalted butter
  • 75 grams granulated sugar
  • 75 grams raisins or currants
  • 1 unit large egg
  • 2 tablespoons milk
  • 1 pinch pinch of salt
  • 2 tablespoons extra granulated sugar (for dusting)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and a pinch of salt.

Step 2

Cut the unsalted butter into small cubes and rub it into the dry ingredients using your fingertips until the mixture resembles fine breadcrumbs.

Step 3

Stir in the granulated sugar and raisins or currants, ensuring they are evenly distributed throughout the mixture.

Step 4

In a small bowl, beat the large egg and mix it with 2 tablespoons of milk. Gradually add the wet ingredients to the flour mixture, stirring with a wooden spoon or your hands, until it forms a soft dough. If the dough is too dry, add a little more milk, one teaspoon at a time.

Step 5

Lightly flour your work surface and roll the dough out to about 1 centimeter (0.4 inches) thick.

Step 6

Using a 6 cm (2.4-inch) round cookie cutter, cut out circles of dough and set them aside. Re-roll the scraps and cut out more cakes until the dough is used up.

Step 7

Heat a heavy-bottomed skillet or griddle over medium heat. Lightly grease the surface with a small amount of butter or oil, then wipe off any excess with a paper towel.

Step 8

Cook the Welsh cakes in batches by placing them on the griddle and cooking for about 2-3 minutes on each side, or until they are golden brown and slightly puffed. Adjust the heat if necessary to prevent burning.

Step 9

Remove the cooked Welsh cakes from the griddle and immediately sprinkle both sides with extra granulated sugar for a sweet crunch.

Step 10

Let the cakes cool slightly on a wire rack before serving. Enjoy them warm or at room temperature with a cup of tea or coffee.
