Ingredients

  • 5 medium-sized Russet potatoes
  • 1 large Onion
  • 2 medium Carrot
  • 2 Celery stalks
  • 3 Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 strips Bacon
  • 0.5 cup (shredded) Cheddar cheese
  • 2 tablespoons (chopped) Chives

Directions

Step 1

Peel and dice the potatoes into small, even-sized cubes. Finely chop the onion, carrots, celery, and garlic. Set aside.

Step 2

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and place it on a paper towel to drain. Reserve 1 tablespoon of the bacon grease in the pot.

Add the butter to the pot with the bacon grease. Once melted, stir in the chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

Add the garlic and cook for an additional minute until fragrant. Stir in the flour and cook for 1-2 minutes to create a roux.
