Directions

Step 1

Season the beef chuck roast with salt and black pepper on all sides.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef on all sides until browned, approximately 10 minutes. Remove the beef and set it aside.
