Ingredients

  • 1.5 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 medium carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper. Add the meat to the pot in batches, searing until browned on all sides. Remove from the pot and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Step 4

Stir in the garlic and cook for an additional minute, being careful not to burn it.

Step 5

Sprinkle the flour over the onions and garlic, stirring to coat and cook for 1-2 minutes to remove the raw flour taste.

Step 6

Gradually pour in the beef broth, stirring constantly to prevent lumps from forming.

Step 7

Add the seared beef back into the pot along with the tomato paste, thyme, bay leaf, salt, and black pepper. Stir to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.

Step 9

Add the carrots, potatoes, and celery to the pot. Stir, cover, and simmer for an additional 45 minutes, or until the vegetables are tender.

Step 10

Stir in the frozen peas and cook for another 5 minutes.

Step 11

Remove the bay leaf and adjust seasoning with additional salt and pepper if needed.

Step 12

Serve hot, garnished with fresh parsley if desired. Enjoy!
