  • 1 medium yellow onion
  • 2 tablespoons unsalted butter

  • 2 cups shredded cheddar cheese
  • 0.75 cup sour cream
  • 2 large eggs
  • 1 sleeve Ritz crackers
  • 3 tablespoons unsalted butter (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Wash the squash and slice them into thin, even rounds. Peel and finely dice the onion.

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced squash and diced onion, and cook for 8-10 minutes, stirring occasionally, until softened and excess water releases.
