Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained (reserve juice)
  • 1 cup powdered sugar (for optional glaze)
  • 2 tablespoons reserved pineapple juice (for optional glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes using a hand or stand mixer on medium speed.

Step 4

Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.

Step 5

Gradually mix the dry ingredients into the wet ingredients in three additions, mixing until just combined. Avoid overmixing.

Step 6

Gently fold in the crushed pineapple until evenly distributed throughout the dough.

Step 7

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look slightly soft, and that’s okay.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

For the optional glaze, whisk together the powdered sugar and reserved pineapple juice in a small bowl until smooth. Drizzle over the cooled cookies as desired.

Step 11

Serve and enjoy these deliciously soft and tangy pineapple drop cookies!
