Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup molasses
  • 1 whole large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes using an electric mixer on medium speed.

Step 4

Add the molasses, egg, and vanilla extract to the creamed mixture, and beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the dough comes together.

Step 6

Using a tablespoon or cookie scoop, portion the dough into 1-inch balls. Roll each ball in the reserved 1/4 cup of granulated sugar to coat.

Step 7

Place the dough balls 2 inches apart on the prepared baking sheets.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops have a crackled appearance.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve warm or store at room temperature in an airtight container for up to 5 days.
