Ingredients

  • 1 small head Green cabbage
  • 0.5 small head Red cabbage
  • 3 medium Carrots
  • 1 medium Red bell pepper
  • 0.25 cup (chopped) Fresh parsley
  • 0.25 cup Extra-virgin olive oil
  • 0.25 cup Red wine vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove (minced) Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Thinly slice the green cabbage and red cabbage using a sharp knife or mandoline. Place in a large mixing bowl.

Step 2

Peel and shred the carrots using a box grater or food processor. Add to the bowl with the cabbage.

Thinly slice the red bell pepper into matchstick-like pieces and add to the bowl.
