  • 2 leaves Bay leaves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Water (optional for adjusting consistency)

Directions

Step 1

Prepare the vegetables: peel and slice the carrots, chop the celery and onion into small pieces, dice the potatoes into 1-inch cubes, and mince the garlic cloves.

Step 2

Heat olive oil in a large soup pot over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set it aside.
