Ingredients

  • 4 medium Russet potatoes
  • 100 ml Olive oil
  • 4 cloves Garlic
  • 2 tablespoons Fresh oregano
  • 1 whole Lemon
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Ground paprika
  • 2 tablespoons Chopped parsley

Directions

Step 1

Wash and peel the potatoes, then cut them into even-sized wedges or thick slices, about 1/2 inch thick.

Step 2

Submerge the potato slices in a bowl of cold water for 10 minutes to remove excess starch, then drain and pat dry with a kitchen towel.

Step 3

Heat the olive oil in a large skillet or frying pan over medium heat until shimmering.

Step 4

Smash the garlic cloves with the side of a knife, keeping them whole to infuse the oil. Add them to the skillet and fry for 1 minute until fragrant.
