Ingredients

  • 250 grams Mixed dried fruits (raisins, sultanas, currants)
  • 150 grams Brown sugar
  • 250 milliliters Hot black tea
  • 250 grams Self-raising flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 large Egg
  • 1 tablespoon Butter (optional, for greasing)

Directions

Step 1

In a large mixing bowl, combine the mixed dried fruits and brown sugar.

Step 2

Pour the hot black tea over the fruit mixture, stir well, and let it soak for at least 1 hour (or until the fruit has plumped).

Step 3

Preheat your oven to 170°C (340°F) and grease a 2-pound loaf tin with butter or line it with baking parchment.

Step 4

Sift the self-raising flour, ground cinnamon, and ground nutmeg into the soaked fruit mixture. Gently fold together until just combined.

Step 5

Beat the egg in a small bowl, then add it to the batter and mix thoroughly until the ingredients are evenly distributed.

Step 6

Pour the batter into the prepared loaf tin, smoothing the top with a spatula.

Step 7

Bake the fruit loaf in the preheated oven for 75 minutes, or until a skewer inserted into the center comes out clean.

Step 8

Remove the loaf from the oven and allow it to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Slice and serve plain or with a generous smear of butter. Store leftovers in an airtight container for up to 5 days.
