Ingredients

  • 6 ears fresh corn (on the cob, husked and cleaned)
  • 4 tablespoons unsalted butter
  • 2 tablespoons bacon drippings
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup whole milk

Directions

Step 1

Using a sharp knife, cut the kernels off the ears of corn. Place the flat end of the cob on a cutting board and slice downward carefully. Once all kernels are removed, use the back of the knife to scrape the cob to extract the milky corn pulp into a bowl. Set aside.

Step 2

In a large skillet, heat 4 tablespoons of unsalted butter and 2 tablespoons of bacon drippings over medium heat until melted and sizzling.

Step 3

Add the corn kernels and the scraped corn pulp to the skillet. Stir to coat the corn evenly in the melted butter and bacon drippings.

Step 4

Sprinkle in the granulated sugar, salt, and black pepper. Stir well to incorporate the seasonings throughout the corn mixture.

Step 5

Reduce the heat to medium-low and add 1/4 cup of whole milk to the skillet. Stir frequently to prevent sticking and allow the corn to simmer gently until it becomes tender and creamy, about 10-12 minutes.

Step 6

Taste and adjust seasoning if needed. You can add more salt, pepper, or a tiny pinch of sugar depending on the sweetness of the corn.

Step 7

Once done, remove from heat and serve immediately as a side dish to fried chicken, meatloaf, or your favorite southern meal.
