Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 0.5 pound ground pork
  • 0.5 pound ground chicken livers
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic, minced
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 2 stalks green onions, sliced for garnish
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Combine the rice and water in a medium pot, bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Step 2

Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the ground pork and chicken livers, cooking until browned and fully cooked, breaking up the meat with a wooden spoon as you go. Remove the meat from the skillet and set aside.

Step 3

In the same skillet, add the diced onion, bell pepper, and celery. Cook over medium heat for 5-7 minutes until softened, stirring occasionally.

Step 4

Add the minced garlic, Cajun seasoning, thyme, and paprika to the skillet, and sauté for another 1-2 minutes until fragrant.

Step 5

Return the cooked meat to the skillet and stir to combine with the vegetables and spices.

Step 6

Pour in the chicken broth and let the mixture simmer for 5 minutes, allowing the flavors to meld together.

Step 7

Add the cooked rice to the skillet, stirring well to coat the rice with the meat and vegetable mixture. Adjust seasoning with salt and black pepper to taste.

Step 8

Continue to cook for another 2-3 minutes, stirring occasionally, until the dish is heated through and well combined.

Step 9

Garnish with sliced green onions and serve hot. Enjoy Granny's Dirty Rice as a main dish or flavorful side!
