Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 3 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Milk (if needed)
  • 1.5 cups Powdered sugar (for optional icing)
  • 3 tablespoons Milk (for optional icing)
  • 0.5 teaspoon Vanilla extract (for optional icing)
  • 0 Food coloring (optional)

Directions

Step 1

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy using a hand or stand mixer.

Step 2

Add the eggs and vanilla extract to the bowl, and continue mixing until fully combined.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 4

Gradually add the dry ingredients to the wet mixture, mixing on low speed until a dough forms. If the dough seems too dry, add 1 tablespoon of milk to bring it together.

Step 5

Divide the dough in half and shape each portion into a flat disc. Wrap the discs in plastic wrap and refrigerate for at least 1 hour, or until firm.

Step 6

Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

Step 7

On a lightly floured surface, roll out the dough to about 1/4 inch (6 mm) thickness. Use cookie cutters to cut out shapes, and transfer the cookies to the prepared baking sheets.

Step 8

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are just starting to turn golden.

Step 9

Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

If desired, prepare the icing by whisking together powdered sugar, milk, and vanilla extract in a small bowl. Add food coloring if desired.

Step 11

Use a spoon or piping bag to decorate the cooled cookies with the icing. Allow the icing to set before serving.
