  • 1.5 cups granulated sugar
  • 0.5 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup hot water
  • 1.5 cups sweet cherries, pitted and halved
  • 0.5 cups semisweet chocolate chips
  • 1 cup powdered sugar
  • 3 tablespoons unsweetened cocoa powder (for glaze)
  • 4 tablespoons butter, melted
  • 3 tablespoons milk
  • 0.5 teaspoons vanilla extract (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Step 5

Slowly stir in the hot water, a little at a time, until the batter is smooth and thin.

Step 6

Fold in the pitted and halved cherries and chocolate chips, being careful not to overmix.

Step 7

Pour the batter into the prepared baking pan and spread it out evenly.

Step 8

Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and let it cool completely in the pan on a wire rack.

Step 10

To make the glaze, whisk together the powdered sugar, cocoa powder, melted butter, milk, and vanilla extract in a small bowl until smooth and pourable.

Step 11

Once the cake has cooled, spread the chocolate glaze evenly over the top.

Step 12

Slice and serve. Store any leftovers covered at room temperature for up to 3 days.
