  • 1 3-4 lbs Whole chicken
  • 12 cups Water
  • 3 medium Carrots
  • 3 Celery stalks
  • 1 large Onion
  • 2 Garlic cloves
  • 2 Bay leaves
  • 0.25 cup, chopped Fresh parsley
  • 2 sprigs or 1 tsp dried Fresh thyme
  • 2 tsp (or to taste) Salt
  • 1 tsp (or to taste) Black pepper
  • 2 cups Egg noodles (optional)

Directions

Step 1

Place the whole chicken in a large stockpot and add 12 cups of water, ensuring the chicken is fully submerged.

Step 2

Peel and roughly chop the carrots, celery, and onion. Smash the garlic cloves with the side of a knife. Add the vegetables and garlic to the stockpot along with the bay leaves, parsley, thyme, salt, and black pepper.

Step 3

Bring the water to a boil over high heat. Once boiling, reduce the heat to low and cover the pot, letting it simmer gently for about 1 hour or until the chicken is fully cooked and tender.

Step 4

Carefully remove the chicken from the pot and place it on a cutting board. Allow it to cool slightly before shredding the meat off the bones. Discard the skin and bones.

Strain the broth through a fine-mesh sieve or cheesecloth into another large pot to remove the vegetables and aromatics. If desired, skim off any excess fat from the surface of the broth.
