Ingredients

  • 1 piece Chicken (whole, about 4-5 pounds)
  • 8 cups Water
  • 4 cups Chicken broth
  • 1 piece Carrot (large, sliced)
  • 1 piece Celery stalk (sliced)
  • 1 piece Onion (large, quartered)
  • 2 pieces Garlic cloves (crushed)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt (for dumplings)
  • 4 tablespoons Cold butter (cubed)
  • 0.75 cups Whole milk
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Place the whole chicken in a large pot and add 8 cups of water and 4 cups of chicken broth. Bring to a boil over medium-high heat.

Step 2

Add the sliced carrot, sliced celery, quartered onion, crushed garlic, 1 teaspoon of salt, and 0.5 teaspoon of black pepper to the pot. Reduce the heat to low, cover, and simmer for 60 minutes or until the chicken is tender and fully cooked.

Step 3

Carefully remove the chicken from the pot and set it aside to cool slightly. Strain the broth to remove any solids, then return the broth to the pot.

Step 4

While the chicken cools, prepare the dumpling dough. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and 0.5 teaspoon of salt.

Step 5

Using a pastry cutter or your fingers, cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.

Step 6

Pour in 0.75 cups of milk and gently mix until a soft dough forms. Be careful not to overwork the dough.

Step 7

Shred the cooled chicken into bite-sized pieces, discarding the skin and bones. Add the shredded chicken back into the pot of broth and bring to a simmer over medium heat.

Step 8

Using a spoon or cookie scoop, drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot with a lid and cook for 15 minutes. Do not lift the lid during this time, as the steam is essential for cooking the dumplings.

Step 9

After 15 minutes, check that the dumplings are cooked through (they should be fluffy and firm). Taste the broth and adjust seasoning with additional salt and pepper, if needed.

Step 10

Ladle the chicken and dumplings into serving bowls and garnish with fresh parsley, if desired. Serve warm and enjoy!
