Ingredients

  • 4 pieces Bone-in pork chops
  • 2 cups Buttermilk
  • 1 tablespoon Hot sauce
  • 2 cups All-purpose flour
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Paprika
  • 0.5 teaspoons Cayenne pepper
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 cups Vegetable oil

Directions

Step 1

Place the pork chops in a shallow dish or zip-top bag. Pour the buttermilk over them, then add the hot sauce. Turn the pork chops to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.

Step 2

In a large shallow bowl or tray, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.

Step 3

Remove the pork chops from the buttermilk marinade, letting the excess drip off. Dredge each pork chop in the seasoned flour mixture, pressing gently to coat both sides evenly. Place the coated pork chops on a wire rack and let them sit for 10 minutes to help the coating adhere.

Step 4

In a deep skillet or large cast-iron pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature monitoring.

Step 5

Working in batches if necessary, carefully place the pork chops into the hot oil. Fry for about 4-5 minutes per side, or until golden brown and the internal temperature reaches 145°F (63°C). Do not overcrowd the pan.

Step 6

Transfer the fried pork chops to a wire rack set over a baking sheet to drain excess oil. Repeat with remaining pork chops.

Step 7

Serve hot with your favorite sides, such as mashed potatoes, greens, or biscuits.
