Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 pieces Large eggs
  • 2 teaspoons Pure vanilla extract
  • 0.5 cup Whole milk
  • 3 pieces Granny Smith apples, peeled, cored, and diced
  • 0.5 cup Chopped pecans or walnuts (optional)
  • 2 tablespoons Confectioners' sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch round or square baking pan and set it aside.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer set to medium speed until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Reduce the mixer speed to low and gradually add the flour mixture in three additions, alternating with the milk in two additions, starting and ending with the flour mixture. Beat until just combined. Do not overmix.

Step 6

Using a rubber spatula, fold in the diced Granny Smith apples and chopped nuts (if using) until evenly distributed in the batter.

Step 7

Pour the batter into the prepared pan, spreading it evenly with the spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then carefully transfer it to a wire rack to cool completely.

Step 10

Once cooled, dust the top with confectioners' sugar before serving, if desired.
