Ingredients

  • 200 g Plain flour
  • 2 tsp Ground ginger
  • 1 tsp Baking soda
  • 100 g Unsalted butter
  • 150 g Brown sugar
  • 2 tbsp Golden syrup
  • 1 large Egg
  • 100 g Dark chocolate chips
  • 50 g Crystallized ginger (chopped)
  • 1 pinch Sea salt (optional, for garnish)

Directions

Step 1

Preheat the oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a mixing bowl, sift together the plain flour, ground ginger, and baking soda. Set aside.

Step 3

In a saucepan over low heat, melt the unsalted butter, brown sugar, and golden syrup together. Stir until smooth and remove from heat to cool slightly.

In a small bowl, beat the egg. Slowly add the cooled butter mixture to the beaten egg, whisking continuously to avoid cooking the egg.

Gradually pour the wet mixture into the dry ingredients, stirring until a dough forms.
