Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 pieces large eggs
  • 2 teaspoons pure vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoons baking powder
  • 0.5 teaspoons kosher salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the softened butter, peanut butter, granulated sugar, and brown sugar. Beat with a hand or stand mixer on medium speed until light and creamy, about 2-3 minutes.

Step 3

Add the eggs and vanilla extract to the bowl, then beat again until fully incorporated.

Step 4

In a separate mixing bowl, whisk together the flour, baking soda, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Use a small cookie scoop or tablespoon to portion out the dough into 1.5-inch balls. Place the dough balls 2 inches apart on the prepared baking sheets.

Step 7

Using a fork, gently press the tines into the dough balls to create a criss-cross pattern, flattening them slightly.

Step 8

Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden but the centers are still soft. Do not overbake.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Enjoy with a glass of milk or share with family and friends!
