Ingredients

  • 4 pieces bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic cloves, minced
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the pork chops dry with paper towels and set aside.

Step 2

In a shallow dish, mix the flour, paprika, garlic powder, onion powder, dried thyme, salt, and black pepper.

Step 3

Dredge each pork chop in the seasoned flour, coating evenly, and shake off any excess. Reserve 2 tablespoons of the seasoned flour for the gravy.

Step 4

Heat a large skillet over medium heat and add the butter and olive oil. Once hot, place the pork chops in the skillet and sear for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside on a plate.

Step 5

In the same skillet, add the sliced onion and cook for 5 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Sprinkle the reserved seasoned flour over the onions and garlic, stirring constantly, and cook for 1-2 minutes to create a roux.

Step 7

Gradually pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir until the mixture thickens, about 3-4 minutes.

Step 8

Reduce the heat to low and slowly stir in the heavy cream. Return the pork chops to the skillet, spooning some of the gravy over the top.

Step 9

Cover the skillet and simmer on low for 20-25 minutes, or until the pork chops are fully cooked and tender.

Step 10

Taste the gravy and adjust seasoning, if necessary.

Step 11

Garnish with chopped fresh parsley and serve hot alongside mashed potatoes or steamed vegetables. Enjoy!
