Ingredients

  • 2 cups Rolled oats
  • 0.75 cup Almonds, chopped
  • 0.5 cup Dried cranberries
  • 0.25 cup Sunflower seeds
  • 0.5 cup Honey
  • 0.5 cup Natural peanut butter
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spread the rolled oats and chopped almonds evenly on a large baking sheet. Toast them in the oven for 5 minutes, then remove and set aside to cool.

Step 3

In a small saucepan over low heat, combine the honey, natural peanut butter, and coconut oil. Stir occasionally, heating just until the mixture is smooth and well-combined. Remove from heat and stir in the vanilla extract, ground cinnamon, and salt.

Step 4

In a large mixing bowl, combine the toasted oats and almonds with the dried cranberries and sunflower seeds.

Step 5

Pour the warm honey and peanut butter mixture over the dry ingredients. Mix thoroughly with a rubber spatula until all ingredients are evenly coated.

Step 6

Line a baking dish (8x8 inches works well) with parchment paper or lightly grease it. Transfer the granola mixture to the dish and press it down firmly with the spatula or your hands to create an even layer.

Step 7

Refrigerate the dish for at least 2 hours to allow the mixture to set.

Step 8

Remove the granola from the dish and slice it into bite-sized pieces or squares using a sharp knife.

Step 9

Store the granola bar bites in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 2 weeks.
